Steakhouse and bar on the top floor
On Södra Hamngatan in Gothenburg, a new building has risen where Restaurant Johanna sits like a jewel on the top floor, overlooking the city rooftops. The name is directly inherited from Leif Mannerström and Crister Svantesson’s legendary Restaurant Johanna, which opened in the same neighbourhood in 1974.
Head chef Alexander Stärnerz explains that the heart of the kitchen is the large wood-fired grill, where meat, fish, vegetables and seafood are cooked over an open flame. At the bar, there is a particular focus on different types of martinis.
Behind Johanna is Stureplansgruppen, Sweden’s largest privately owned hospitality group, with operations spanning hotels, restaurants, events, conferences, bars and nightclubs.

Dry-aging cabinet and parrilla grill
In Johanna’s dining room, one of the first things you notice is the red-lacquered dry-aging cabinet for meat and fish, manufactured by Haglund Industri. Haglund also supplied the matching red refrigerated counter, as well as the other stainless-steel refrigerated counters for the kitchen and bar.
The open kitchen is centred around an impressive wood-fired charcoal grill from Phoenix Prime Focus, alongside a cooking suite from Palux and combi ovens from Rational. The stainless-steel, titanium-reinforced pass features an integrated hotplate from Stayhot. The bar was fitted with custom-made stainless-steel furnishings from Novameta.
In the dishwashing area, a WD-8 pot washer from Wexiödisk is complemented by a PT-M hood-type dishwasher and UC-M glasswasher from Winterhalter. The prep kitchen was equipped with induction cooking from Fribergs, an oven from Rational and a mixing machine from Agrenco.
