Modern nordic tasting menu
In 2019, Martin Moses won the prestigious Swedish competition Årets Kock, and two years later he opened his own restaurant, Human, on Risåsgatan in Gothenburg. Human is a modern, Nordic and personal restaurant with 45 seats, where the food is prepared in front of the guests in the open kitchen located in the dining room. The focus is on local, seasonal ingredients, seafood from the west coast, and sustainability throughout every step of the process. A tasting menu is served here, accompanied by a carefully curated wine pairing, available for both lunch and dinner. In 2022, the restaurant received DI Weekend’s award for “Best Business Restaurant.” Just around the corner, you’ll also find Bar Human.

the equiPment
Perfecta´s delivery
For Human, we were entrusted with delivering equipment, refrigeration units, and stainless steel furnishings for the kitchen. The cooking line includes a Fribergs range, a griddle from Mareno, a countertop fryer from FriFri, and combi ovens from Rational. In the open kitchen, heated cabinets with sliding doors from Gastroteknik were installed. All refrigerated counters are from Haglund Industri, and refrigerators as well as the cold room are from Coolpart. In the dishwashing area, a pre-owned dishwasher was complemented with an Excellence I glasswasher with built-in reverse osmosis from Winterhalter, ensuring spotless glasses.
