At the hotel at Nääs Fabriker, you’ll find Fabriksköket, where a breakfast buffet, lunch, and à la carte are served, along with weekend brunch featuring a cake buffet baked by the in-house pastry chef. During the season, a well-curated Christmas buffet is also offered, with a strong focus on local produce. The kitchen cooks with the best seasonal ingredients, often locally sourced, using Swedish techniques whenever possible - and only Swedish meat is served. Fabriksköket is part of the wider offering at Nääs Fabriker - a destination set in a historic industrial mill environment by the shores of Lake Sävelången just outside Gothenburg. Here you’ll find a café, hotel, restaurants, shops, and beautiful surroundings ideal for walks and activities. The combination of industrial heritage and contemporary design makes the area a place to visit for relaxation, culinary experiences, and inspiring environments, perfectly suited for conferences, celebrations, and weddings.

A heated, titanium-reinforced service counter over 5 metres long

For the open kitchen’s service pass, a striking 8 cm thick, titanium-reinforced stainless-steel countertop was custom-built in two sections, with a total length of five and a half metres. It features three integrated heating zones and a recessed combination well with raised edge, designed for hot or cold garnishes. The heat lamps above are from Stayhot, and the warming cabinets below from Gastroteknik. Along the back of the cooking line, equipment was installed including induction hobs, fryer, griddle, and lava stone grill from Mareno, as well as ovens from Rational and a salamander from Palux. In the prep area, all stainless-steel fabrication was supplied, for example a central island with integrated induction from Mareno, plus a Rational floor-standing oven, an iVario combination table, and the existing cooking kettle from Getinge, which was reinstalled. All refrigerated counters, fridges, and freezers were supplied by Haglund Industri. We also delivered three new cold rooms and one freezer room from Coolpart, complete with shelving systems. In the dishwashing area, a tunnel dishwasher from Wexiödisk and a Winterhalter UC-M Excellence glasswasher with built-in osmosis were installed, ensuring spotless wine glasses. This was an incredibly enjoyable project where we also contributed to a significant amount of the design work together with the kitchen consultant.
