Italian flavors with a creative twist
If you pass through inside at Sperling & Co at Stureplan in Stockholm, you´ll find a new Italian restaurant in the back area. Tosto – which means strength/inevitability in Italian – is led by renowned restaurateur Max Duhs together with Stureplansgruppen. The restaurant offers 60 seats spread across the dining area, bar, and a community table placed between the open kitchen and the large meat and charcuterie fridge. Here, traditional Italian cuisine is reinterpreted in a thoughtful and creative way with hand-shaped pasta, well-aged meat cuts, and plenty of love. The wine list naturally focuses heavily on Italy, and the bar offers an amazing cocktail repertoire with lots of herbs and classic Italian ingredients. Expect to be delighted and surprised.

Large charcuterie fridge and dry-aging cabinet
For Tosto, we delivered the large charcuterie and dry-aging display fridge, where the restaurant stores meat, fish, charcuterie, and cheeses, among other items. This unit—along with refrigerated counters, a freezer counter, warming cabinets, and custom stainless-steel bar fittings with sinks and ice wells—was manufactured by Haglund Industri. In the open kitchen, there is a pizza oven from Pizzamaster and an oven from Eloma. The cooking line from Palux includes a pasta warmer, induction cooktop, and deep fryer, while the workbench opposite features a marble countertop for pizza preparation. Heat lamps above the pass are from Stayhot. For the dishwashing area, we supplied Winterhalter dishwashers, including a pass-through dishwasher and a glasswasher with built-in osmosis for spotless glassware. Stainless-steel fittings were supplied by Sjöö. We also delivered a cold room from Coolpart with shelving systems for both the cold room and storage areas, as well as refrigerators and freezers from Gram and Tefcold.
