about the project
Locally produced and homemade
At Pannhuset Kafé & Krog, you’ll find everything from pastries and lunch to a delicious dinner, all made with high-quality, locally sourced ingredients. The pastries are crafted by the in-house pastry chefs, and all bread comes from the on-site sourdough bakery Bröd & Malt, which uses only heritage grains and organic ingredients. The ice cream is also made in-house. Much of the vegetables used are grown on the café’s own nearby fields, or sourced from local producers. Coffee beans are roasted on site in the large roaster inside the café and ground to order. In the evening, the fire is lit in the old boiler, and dishes are cooked over open flames - ranging from wood-fired pizzas to Mediterranean-inspired plates. The drinks menu is extensive, and a good place to start is the award-winning Happy Baker from the café’s own craft brewery. Pannhuset is part of the offering at Nääs Fabriker - a destination set in a historic factory environment on the shores of Lake Sävelången outside Gothenburg. Here you’ll also find a hotel, restaurants, shops, and beautiful surroundings for walks and activities. The blend of industrial heritage and contemporary design makes the area a place to visit for relaxation, food experiences, and inspiring environments all year round.

Custom refrigerated display for pastries, sandwiches, and beverages
For Pannhuset, an extra-large black-lacquered refrigerated display unit with custom height and four shelves was needed, and it was manufactured by Haglund Industri. They also supplied all the refrigerated counters and blast chiller, as well as the glass-door beverage cooler in the café and the ageing cabinet, which is now used as a wine fridge by the open kitchen. In the café, an Italian gelato display with inset pans was installed, along with a glass dome for the chocolates that need to be kept at room temperature. Coffee is brewed using equipment from Bunn. In the kitchen area, a Mareno cooking line was installed, featuring a fryer, induction cooking zones, a warming unit from Elektrotermo, and heat lamps from Stayhot. In the existing prep kitchen, a griddle from Fribergs was added.
