about the project

A take on sushi - the Stockholms way

In an old sushi spot on Odengatan in Stockholm, a new sushi bar has moved in - Gigi’s - with Gian Luca Montero as the gastronomic creative force in the kitchen, previously one of the founders of the much-loved Indio Kitchen. Here, Japanese culinary craftsmanship is interpreted with inspiration from around the world and as a love letter to the city, through what Gian calls “Stockholm sushi.” If you’re looking for a sushi experience with a creative twist and bold flavors, this place is a must. Sushi as an art form, prepared with exquisite ingredients and an extra dose of love.

the equipment

Stainless cooling counter for fish

For Gigi’s, we were entrusted with the great assignment of delivering the interior fittings, including benches, shelving, and refrigerated counters in stainless steel. The refrigerated counter for fish storage is made of acid-resistant stainless steel to prevent corrosion caused by the chlorides found in seawater. A wall-mounted Rational XS with an integrated ventilation hood was installed on the wall. The kitchen also features a freezer cabinet from Gemm and an ice machine from NTF. The dishwasher is an undercounter model from ClasseQ, along with a pre-rinse spray from Echtermann. We were also involved in planning and drawing up the kitchen layout.
