Bread-bread and fika - the Eken way
Right next door to Restaurant Hantverket — Eken kitchen café and bakery— has finally opened. Stefan Ekengren describes his vision as a bakery and café serving the kitchen’s own favorite breads and pastries: Eken breads baked by chefs, the chefs’ way. Traditional classics such as Swedish flatbreads, rye breads, loaves, dark rye bread, and soft white rolls — all generously seasoned with flavor. Bread is served in the kitchen café with the classic toppings you long for: falukorv sausage, fried Baltic herring, or meatballs. Or you can build your own dream sandwich with the ingredients you order separately on a side plate. On the pastry shelf, you’ll find beloved Swedish classics such as cinnamon buns, chocolate-covered “dammsugare,” mazarins, Danish pastries, and punsch rolls. Everything is baked using the finest sustainable grains from carefully selected farmers and mills. And if you’re in the mood for something other than coffee or tea with your Eken fika, you might opt for an ice-cold lager, crisp champagne, or sweet Swedish punsch. As always, you can expect craftsmanship full of flavor.
We built a bakery and café exactly the way we wanted it, and in the bakery we received the best support we could have hoped for from Perfecta. We’ve been difficult at times, changed our minds, and had plenty of scattered ideas since we’ve never built a bakery before — but the collaboration has flowed smoothly throughout.

Bakery oven and proofer in roll-in design
For Eken, we were entrusted with the great assignment of delivering all new equipment and stainless steel fittings for both the bakery and the kitchen. In the bakery, a roll-in deck oven and proofer from Sveba Dahlen were installed, along with a spiral mixer, bun divider, and dough sheeter from ABM. A classic mixer from Agrenco was also added. The bakery workbench was fitted with a laminated solid beech countertop. In the kitchen area, a wall-mounted Rational XS was installed, along with a griddle from Wery and a salamander from Technoinox. All new refrigerated counters were supplied by Haglund Industri, and an undercounter dishwasher from Winterhalter was installed. We also built new cold and freezer rooms from Coolpart, including connection to the existing central refrigeration system, as well as shelving interiors for these rooms.
