Green and delicious from the Voltaire family
On the fifth floor of Kulturhuset at Sergels Torg in Stockholm, the next generation of Voltaire — Lotta together with her daughters Iris and Malva — has moved in with their new restaurant, Dotter Voltaire, where a green food philosophy meets music and culture. Here, guests are served a daily lunch, an à la carte menu, as well as a selection of hearty sandwiches, salads, and a children’s menu available throughout the day. Coffee and pastries are baked on site, using as large a proportion of organic ingredients as possible. The venue also includes Blå Baren and Ateljén, which can be rented for events or larger groups tailored to guests’ needs, as well as catering based on the same concept. In May, an additional bar and the rooftop terrace will open, where the restaurant’s offerings can be enjoyed under the open sky above Stockholm’s most central meeting place. Kulturhuset has undergone extensive renovations in recent years, and with the new restaurant now in place, the building feels more complete than ever.
We are incredibly happy with our collaboration with Perfecta in building our kitchen, bar, and serving line. Their attentiveness and “everything can be solved” mindset made the process both smooth and enjoyable - and the result is fully tailored to our needs. Display counters and smart workflow
For Dotter Voltaire, we were entrusted with the exciting assignment of delivering equipment and machinery for the serving area, kitchen, bar, and dishwashing room. Along the long serving line, there are two display counters with glass domes mounted directly onto the countertop — the one at the salad station features a refrigerated top. The front countertop was welded on site into one continuous piece running the entire length of the line and includes built-in refrigerated wells for soft drinks as well as raised refrigerated troughs for preparing salads and other dishes.
All refrigeration units are from Haglund Industri, with refrigerated counters available both in stainless steel design and customized to be clad in joinery facing the guest area. The line also includes a Porkka warming cabinet with humidity control to prevent food from drying out during hot holding, as well as a Menumaster microwave. Additional equipment includes an ice machine from Manitowoc, an undercounter freezer from Gram, a Crem EX3 espresso machine with grinder, and a filter coffee brewer from Bonamat. Above the cashier station, a custom-made shelf in glass and stainless steel is suspended for wine display and glass storage.
In the kitchen, ovens from Rational were installed, along with a tilting kettle on wheels from Jöni, an induction range and griddle from Fribergs, and a fryer from FriFri. The mixer is from Varimixer, and the refrigerators and freezers are from Haglund Industri.In the dishwashing area, both a hood-type dishwasher and a utensil washer from Wexiödisk were installed. We also supplied shelving systems for the cold room and storage areas.
