Elegant brasserie signed by Björn Frantzén
"An international power-brasserie, large and vibrant, with generous opening hours and an extensive menu" - was Björn Frantzén's vision for the restaurant that would open in the historic old premises of 1200m2 where Biograf Astoria had previously operated since 1928. And so it was.
The foyer is listed as a heritage building and has been enhanced with a large bar, a dining room with an open kitchen, a wine bar, and a back room as well as a preparation kitchen with a bakery in the basement. A very thoughtful and inviting design that weaves together the historical with modern times in a very tasteful manner.
The Equipment
Perfecta's Delivery
In all dining halls, there are custom-built wine coolers in various designs, a dry-aging fridge, and refrigeration counters that in several cases have been customised to be fitted with drawer fronts from the carpentry. All from Haglund Industri.
In the open kitchen, there is a magnificent custom-made Marrone stove in cream and brass surrounded by work surfaces with a rounded extra thick countertop. There is also a custom-built charcoal grill with a height-adjustable grill rack. The countertop here was welded together on-site to be one large seamless piece.
The prep kitchen is located in the basement, equipped with ovens and combination cooking tables in Vario from Rational, an induction stove from Fribergs, and a deck oven from Sveba Dahlen.
Previously, Perfecta has also supplied the kitchen to the three-star Frantzén.
