Swedens only three starred restaurant
At the top of the building is the exclusive fine dining restaurant Frantzén, spanning 521 square meters across three floors with seating for 23 guests. Reservations are released monthly for a lunch or dinner experience featuring a fixed menu at a set price. Here, every serving is its own small universe of exquisite ingredients, craftsmanship, precision, service, and artistry.
Frantzén is the first Swedish restaurant to be awarded three Michelin stars and has also received several other prestigious accolades. Behind the restaurant is Björn Frantzén, who also operates Brasserie Astoria in Stockholm, Zén and Brasserie Astoria in Singapore, Studio Frantzén and FZN in Dubai, Villa Frantzén in Bangkok, and Brasserie Astoria in Marbella.

Marrone kitchen hoisted in through the window
The front kitchen at Frantzén, shown in the images here, is a custom-made stainless steel and gray/blue kitchen from the Italian manufacturer Marrone. It features fully welded tops with an integrated charcoal grill, induction hobs, warming cabinets, built-in heated zones, refrigerated counters, and freezer cabinets.
As these units were delivered with complete tops, they had to be lifted over the rooftops by crane and brought in through a window opening facing the inner courtyard.
The back kitchen is equipped with induction units from Fribergs, ovens from Rational, and refrigerated counters and stainless steel fittings from Costilla. There are also fish-adapted refrigerators and freezer cabinets from Haglund Industri.
In the dishwashing area, Winterhalter hood-type dishwashers and an Excellence-i undercounter dishwasher with built-in reverse osmosis for spot-free glassware were installed.
