Dutch street food with the potato in focus
Pom Friterie is a restaurant in central Stockholm where specially selected potatoes take center stage as an exclusive main course. Inspired by Dutch street food, the hand-cut fries become a form of art, paired with well-crafted toppings and accompaniments featuring flavors from around the world. To complement the fries, guests can choose from various sides such as Dutch croquettes or different types of fried proteins. The experience is best enjoyed with one of their exquisite craft cocktails or a Heineken on tap, and finished with a delicious Dutch dessert. The founders won the 2024 World Championship in French Fries — and for those who’ve been there to taste them, it’s easy to understand why.
the equipment
Perfecta´s delivery
We had the joy of equipping the restaurant with all refrigerated counters from Haglund Industri, one of which included a custom-built chilled rail for all toppings, as well as freezers, cold and freezer rooms, and their complete interior fittings. In the kitchen, an Eloma floor-standing combi oven was installed, and in the dishwashing area, Winterhalter Energy dishwashers with built-in steam recovery and osmosis for spotless glassware. All stainless steel furnishings in the kitchen and bar were also supplied, along with an ice machine from Hoshizaki.The special closed fryers with lids from Autofryer were procured separately by the client through their own channel.
