about the project
French flavours and an extensive wine list in the old foundry
La Fonderie is located at Ångfärjekajen in Malmö, in a historic brick building that once housed a foundry. Here, classic French cuisine is given a Scanian twist, with lunch and dinner menus featuring familiar French favourites such as oysters, pâté, steak frites and moules frites, accompanied by an extensive wine list and French-inspired cocktails.
La Fonderie also hosts a variety of themed events, including Måndagsklubben and Winemaker’s Dinners. The much-talked-about paintings of women on the large wall were created by Sara N Bergman.
the equipment
Perhaps Malmö’s longest bar?
For La Fonderie, we had the pleasure of supplying equipment and appliances for both the bar and kitchen. The six-metre-long bar top rests on glass-fronted, illuminated refrigerated bar counters from Haglund Industri, who also manufactured the wine cooler. The bar also features an ice machine and freezer from Hoshizaki. The entire bar is clad in Dekton stone composite.
The kitchen was equipped with a gas cooking suite from Berto’s, ovens from Rational, and refrigerated counters and cabinets from Haglund Industri. The pass features heat lamps from Stayhot with heated cabinets below. In the dishwashing area, a WD-7 hood-type dishwasher with pot-washing functionality from Wexiödisk was installed, along with a UC-M Energy Excellence-I from Winterhalter with built-in reverse osmosis and Winterhalter detergent for spotless wine glasses. Tonon shelving was installed in the storage and wine storage areas.
