Polish-free glasses at a Michelin-starred restaurant with Winterhalter detergents from Perfecta
With the right machine, water quality and chemicals, you can achieve crystal-clear glasses straight from the dishwasher.

Crystal-clear glasses at Michelin-starred AIRA
AIRA is one of Stockholm’s most renowned restaurants – a two-MICHELIN-starred restaurant located at Biskopsudden on Djurgården in Stockholm. It opened in spring 2020 by award-winning chef Tommy Myllymäki together with Svenska Brasserier and has since established itself as a destination for exceptional dining and world-class modern Nordic cuisine.
At a restaurant like AIRA, every detail is an important part of the overall experience. That includes the glassware presented to guests.
Since opening, AIRA has used a Winterhalter glasswasher with integrated reverse osmosis to minimise minerals and limescale residues in the rinse water. Despite this, the glasses were not quite as clear as desired, which meant staff still had to spend considerable time polishing them by hand after washing.
Perfecta therefore suggested that AIRA test Winterhalter’s specially formulated glasswashing detergent and rinse aid. The difference was clear – the glasses now come out of the machine crystal clear and can usually be used straight away, with minimal polishing required.
We are very pleased to use Winterhalter’s glasswashing detergent for our glassware here at AIRA. We find that it consistently delivers sparkling-clean results and contributes to a great experience for our guests. Compared with the products we used previously, the glasses require minimal polishing, which makes a huge difference to our daily operations as we use a large number of glasses for each guest.

Reverse osmosis and the right chemistry for polish-free glasses
Achieving polish-free glasses requires the right combination of technology and chemistry. Reverse osmosis (RO) removes salts and minerals from the water that could otherwise leave limescale deposits and marks on the glassware.
But technology alone is not always enough. The detergent, rinse aid and dosage also need to be adapted to the machine and water quality. With the right combination, glasses come out of the machine crystal clear – without the need for manual polishing.
An investment saving both time and money
In a restaurant where large volumes of glassware are washed every day, manual polishing can add up to many hours of work over the course of a year. When glasses are ready for service straight from the machine, staff can spend that time on other tasks while reducing the cost of glassware handling.
For AIRA, the right combination of reverse osmosis and specialised chemicals resulted in both crystal-clear glasses and a more efficient workflow.
Perfecta helps restaurants with the complete solution – from glasswashers and reverse osmosis to the right chemicals, dosage and machine settings.
