Make vegan cheese - or die trying
Stockeld Dreamery is a Swedish food company founded in 2019 with the ambition to redefine cheese and dairy products through plant-based alternatives. Based in Stockholm and also operating in the United States, the company develops fermented products made from peas and lentils that deliver the same taste and texture as dairy-based cheese — but with a significantly lower climate impact (up to ~70% less CO₂ emissions). With a strong research-driven approach and a focus on both function and flavor, Stockeld Dreamery has already launched several products for the retail and food service markets.

Stockeld has a lab where they experiment with different types of cheese and needed a test kitchen nearby for cooking trials of their products, which are supplied to both restaurants and consumers. The kitchen was therefore designed with several islands equipped with induction stoves and household-style ovens, along with a professional section featuring a sandwich grill, salamander, and a pizza oven from Sveba Dahlen. The carpentry and furnishings were custom-built to special dimensions with stainless steel fronts, open sections in oiled oak, and fitted with stainless steel countertops. Beneath the counters, space was created for glass-door refrigerated units with lighting to display and store cheeses. This station also included a durable countertop in cement-beige stone composite from Silestone. For the staff, a dedicated area was added with refrigerators and microwaves for food storage and heating, as well as a coffee and water station. In the dishwashing area, a WD7 dishwasher from Wexiödisk was installed.
