World-class culinary education
Måltidens Hus in Grythyttan is a unique center of excellence for gastronomy. Located in the heart of Bergslagen, it is part of Örebro University and home to the School of Hospitality, Culinary Arts and Meal Science (RHS), which offers some of Sweden’s leading programs in culinary arts and hospitality. Here, students can apply for the programs “Culinary Chef and Meal Creator” and “Sommelier and Meal Creator.” In addition, the school offers standalone courses as well as advanced and research-level education in meal science. The campus also houses a culinary library, a cookbook museum, and a kitchen garden. The building was originally Sweden’s pavilion at the 1992 World Expo in Seville and was relocated to Grythyttan in 1993.

Here, we were selected to deliver the brand-new method kitchen for the school’s programs. The kitchen is designed around three large islands, each with four workstations, featuring built-in induction hobs from Fribergs, glass-door refrigerated counters from Haglund Industri, and stainless-steel furnishings from Novameta. Along the walls, new Rational XS ovens are mounted, alongside several Rational units on stands that were preserved from the old kitchen. The preparation area includes a new floor oven and an iVario frying table. Additional equipment includes warming cabinets from Gastroteknik and a dishwasher from Wexiödisk. The pizza oven and mixing machine from the old kitchen were reused in the bakery, which was fitted with mobile bakery tables with oak tops. This was a challenging project - both getting all the equipment down to the basement level through narrow stairs and ensuring the precise fitting of utilities into the plinths. However, thanks to excellent communication with the construction team, we managed to complete everything on schedule, allowing the school to open and welcome new students in August 2024.
